Method

    Crush the biscuits and hazelnuts by putting them in a plastic bag and bashing them with a rolling pin.

    Melt the butter in a pan and add the crushed biscuit/nut mixture.

    Stir the mixture so it is all coated by the butter.

    Put the mixture into a 20cm cake tin with a removable base.

    Press the mixture down to make a nice solid and crunchy base, and grease the tin with the butter paper.

    Stick the tin in the fridge to chill.

    Drain the mandarins and put them in a container in the fridge for decorating the cheesecake tomorrow, keeping 1/4 pint of juice for the next step.

    Put the juice into a mixing bowl that will sit in a saucepan of hot water and sprinkle the gelatine on top.

    Wait until the gelatine mixture goes spongy.

    Grate the lemon rind off the lemon and squeeze out all its juice while waiting.

    When the gelatine mixture is spongy, stand it in the pan of hot water and heat and stir until the gelatine has dissolved and the liquid is clear and smooth.

    Remove the gelatine mixture from the heat and stir in the lemon juice and rind, then leave it to cool off.

    Put the cheese, cream, and sugar into a big bowl and beat them together until nicely blended and soft.

    Stir in the egg yolks to the cheesy mixture and then stir in the gelatine liquid.

    Beat the egg whites until stiff and carefully fold them into the cheesy mixture.

    When the mixture is smooth, take the base out of the fridge, pour the cheesy mixture in, and return the whole lot to the fridge overnight.

    The next day, check the cheesy mixture has gone solid, push it out of the cake tin, and put it onto a plate for serving.

    Use the mandarins to decorate the top before serving.
