- 225g icing sugar
- 1 egg white
- 1 juice of lemon
- 2 drops glycerine

Especially nice with fruit cakes, or for Xmas cakes.

1. Use a whisk to whisk the egg white. It should be stiff enough to turn the bowl upside down. (Whisk attachments to hand blenders seem to do this best).
2. Add the other ingredients and whisk until blended and stiff.
3. Do not be tempted to add any water etc or the icing won't dry on the cake properly.
4. Spread on the cake.
