Greek Lamb Parcels[Arnisia paithakia sto harti]
Ingredients
- 8 lamb chops or 4 lamb leg steaks
- 2 tbspn olive oil
- salt & freshly ground black pepper
- 2 medium onions,finely chopped
- 2 tbspn tomato puree
- 2 large tomatoes,peeled & chopped
- 3 tbspn fresh flat leaved parsley/coriander finely chopped
- 250 ml dry white wine
- 1 tspn sugar
- 2 tbspn lemon juice

Description
I first tried these lamb parcels in Crete, almost 30
years ago.
Method

PRE HEAT OVEN TO 180deg C.
1 Heat olive oil in a frying pan ,over a medium heat.
2 Fry lamb chops/steaks until browned both sides.Remove
from pan & keep warm.
3 Add onion to pan & fry until soft & translucent.
4 Stir in tomato puree,chopped tomatoes& parsley or
coriander.
5 Season with salt & freshly ground black pepper,
add wine & bring to the boil.
6 Reduce heat & simmer until the sauce thickens,
7 Sprinkle lamb with lemon juice,salt & pepper,
then lay each piece on a square of greaseproof paper.
8 Spoon sauce equally over each portion then fold paper
to make a tight parcel.
9 Place parcels in a single layer in a roasting tin.
10 Cook in the centre of the oven for 45 min/1 hour.
11 Serve each parcel on a plate with potatoes & green
vegetables of your choice.
Part of the fun of this dish is opening the parcels
& getting a blast of the wine & herb sauce
Chef's Tips
Try substituting thyme,oregano,or marjoram for the parsley
