Passover Almond and Apple Cake

Very use as it can be frozen in advance

Method

1. Stew apples in 50 grams sugar and honey.

2. Place cooked apple in bottom of a deep pie dish.

3. Beat margarine and caster sugar till fluffy.

4. Add eggs then almonds and spread over the apples.

5. Bake for 1 hour at 180C/350F/gas 4.

6. Can be frozen.

Ingredients

Eggs 4
Caster Sugar 225 g
Butter Or Margarine 225 g
Honey 50 g
Caster Sugar 50 g
Ground Almonds 225 g
Bramley Cooking Apples 2 - 3 lbs

What quantity of apple is required?
Sorry - I forgot that. It is about 2 - 3 lbs depending on how much apple you like. I will amend the recipe.
