- 1 Onion, chopped
- 2 cloves Garlic, pureed
- 2 tbsp. Olive oil
- 1 tsp. Ground cumin seeds
- 1 tbsp. Sweet Hungarian paprika
- 0.5 tsp. Cayenne pepper
- 2 Bay leaves
- 4 Carrot, sliced
- 2 Chopped fresh tomatoes
- 1 Vegetable stock
- 1 can Fava beans
- 1 tbsp. Chopped fresh parsley
- 4 tbsp. Fresh lemon juice
- to taste Salt and pepper

1. In a large soup pot saute the onions and garlic
in the olive oil.
2. Add the cumin, paprika, cayenne, bay leaves, and
carrots and cook on medium heat for 5 minutes.
3. Stir in the chopped tomatoes and vegetable stock
and simmer until the carrots are tender.
4. Add the fava beans
and the parsley and lemon juice and simmer a little more.
