Ingredients
- 3 tbsp olive oil
- 2 tbsp brown sugar
- 1 tbsp sherry vinegar
- 2 tbsp Wholegrain Mustard
- 2 finely crushed garlic cloves
- 6 finely sliced red onions
- roughly 50g Grated Gruyre cheese
- to taste salt and freshly ground black pepper
- shortcut pastry
- To taste White or Red wine

It's cheap and easy to make and makes a good starter for themed dinner parties.

Heat the olive oil in a non-stick pan and add your onions finely sliced (not diced!). Cover and cook gently for about 15 minutes, until they become all soft. You will need to stir and to watch, you will not want your onions to be burnt!
After 15 minutes if you haven't eaten them yet, add the crushed garlic, the sugar and the vinegar and cook for a further 5 or 6 more minutes, until the onions are caramelised. Salt and pepper to taste
Preheat your oven at 200C or gas mark 5. If you want a big 26 cm tart, roll your pastry and put it in your tart dish. Do some cuts with a fork all over, cover the pastry with beans or stones or whatever you will find handy to cook the pastry without the filling. Bake the pastry for 10 minutes.
Pour yourself a nice glass of wine, you deserve it. But the job is not finish so do drink with moderation!
After 10 minutes, take the now cooked tart, empty any beans or stones or whatever you put in it and spread inside the pastry a spoon of wholegrain mustard. Pour the onion mixture and cover slightly with Gruyere cheese. Return to bake for 10 minutes.
You have now made a delicious French Onion Tart!!!!
Serve it warm on a bed of lettuce!
