- 2 pints chicken stock
- 3 Leeks (finely chopped)
- 6oz Potatoes. peeled and diced
- salt and pepper. to taste
- 142ml / 7 fl oz Skimmed Milk
- pinch grated nutmeg

1. Put onion, garlic, leeks and 1/2 pint of stock into a large heavy based saucepan, cover and bring to the boil.
2. Continue to boil for 5-10 mins, uncover the pan, reduce heat and simmer for 25 mins until onions and leeks are tender, golden and syrupy.
3. Add potatoes with remaining hot stock, season to taste and simmer for 20 mins.
4. Puree the soup in a blender and return to the pan. Add the milk and nutmeg.
