A nice and cheap winter soup that really warms the cockles.

Method

    Peel and chop an onion. Put it in a big pan and gently soften.

    Peel and chop spuds and parsnips. Boil up your water and add to big pan with the onion. Add a stock cube. Add chopped potatoes and parsnips. Season to taste.

    Bring the pot to the boil and then simmer gently. I'd say about an hour is best.

    Towards the end. Stir in curry powder and cream/milk. Then blend up and serve.

Chef's Tips

Don't over do the curry powder. It's just adding to the already quite spicy parsnips.
