Sift the flour and salt into a large mixing bowl.
Break 2 of your eggs into the flour and whisk.
In a mixing jug, mix the water and milk together and gradually add to the egg and flour mixture. Mix until the batter is smooth.
Melt the butter in a frying pan and once hot, add just enough batter to coat the frying pan. Make sure the whole pan is coated and move a spatula around the pancake so that you can easily flip it over.
Once the pancake is golden, remove and stack on a plate until you've used all the mixture.
Once you've cooked all your pancakes, grate your cheese and fry your 4 eggs, ready to assemble your savoury pancakes.
We like to have runny yolks in our fried eggs, but cook them to your personal taste.
Take one of your pancakes, add a slice of ham, sprinkle with grated cheese and then add your hot fried egg. This will start to melt the cheese. Next, roll over your pancake and sprinkle with some more cheese.
Delicious!
Chef's Tips
You can make the pancakes in advance and then reheat the next day. This would also work well with tortilla wraps.
