- 1 Onion (Chopped)
- olive oil
- 2 cloves of garlic. crushed
- 2 Carrots Peeled and Chopped
- 2 green peppers. chopped
- 2 yellow pepper. chopped
- 2 tomatoes chopped
- 2 bay leaves, fresh
- 2 chicken stock cubes
- 400g Tin of Chopped Tomatoes
- salt and freshly ground black pepper
- 1 avacado (ripe), garnish
- 1 lime, garnish
- 1 Fresh green chilli, finely sliced, garnish
- 2 Handfulls tortilla chips
- 1 tsp dried sage

1. Get a large pan on a low to medium heat and pour in olive oil. Add the onion, garlic, carrots and peppers and fry gently for about 10 to 15 minutes until softened, stirring every so often.
2. Add the chopped fresh tomatoes and bay leaves, crumble in the stock cubes and add the tinned tomatoes. Pour in about 2 tomato tins' worth of water, then bring to the boil. Turn down to a simmer for about 20 minutes, stirring occasionally.
3. Preheat your oven to 180oC.
4. Peel and stone your avocado and dice into 1cm cubes. Put these on a plate, grate over your lime zest and squeeze in the juice to keep the avocado from browning. Put on the table next to a plate with your slices of green chilli.
5. Lay your tortilla chips on a baking tray, drizzle with olive oil and sprinkle over the dried sage. Heat in the oven for a few minutes until warmed though.
6. Mash the soup a few times in the pan, season with salt and pepper. Serve
