Ingredients
- 2 X Pack Udon Noodles (Amoy Straight to Wok)
- 2 Chicken breasts
- 12-16 King Prawns (raw ones are best)
- 4 heads Pak Choi
- small pack mushrooms sliced
- 2 handfuls Beansprouts
- Β½ lemon Lemon Juice (fresh)
- Β½ squeezed lime juice
- 2 tbs Thai fish sauce
- 2-3 tbs Soy sauce
- 4-5 garlic cloves. crushed
- to taste Chilli
- grated Ginger (fresh)
- 1 stick Lemon grass
- 2-3 tbs Seasame oil
- 2-3 handfuls Coriander fresh
- 2 handfuls Water chestnuts

Asian inspired quick and easy noodles

Heat wok with seasame oil to smoking hot, cook raw chicken with garlic, ginger, chilli and lemon grass until golden brown. Then add fish sauce, soy sauce, lime and lemon juice with noodles and cook for a further 5-10 minutes. Finally add vegetables and prawns and cook as prefered and prawns have gone pink.
Serve immediately in a bowl with loads of fresh coriander and chop sticks
Chef's Tips
The vegetables can be substituted for a pre-prepared pack from the supermarket for whatever variety appeals.
Other noodles also work, but I find the udon straight to wok ones work the best.
