Description
Easy to make and delicious. Can be used as a flvouring for ice cream, pies or better still drunk ice cold on a hot day.

1. Sterlise a jar or wide necked bottle in boiling water that can hold 2 litres. Set aside.
2. Remove all the zest from the lemons and put into the jar/bottle and pour the vodka over the top. Cover with a tightly fitting lid give it good shake and leave for a week, shaking the jar each day. Best stored in a cool place such as wine cooler or cellar.
3.After a week, prepare the sugar: Place the sugar in a heatproof bowl and pour the boiling water over it. Stir until all the sugar has dissolved.
4.When this has cooled,add it to the vodka and zest peels and leave for another 2 weeks, shaking the jar every day to make sure the flavours are released well into the vodka.
5. Strain through a sieve and decant to a sterilised bottle / bottles.
6. Serve ice cold - best kept stored in a freezer.
