1.Combine the flour, water and salt to form a dough. Turn onto a lightly floured work surface and knead until smooth and elastic then roll out as thinly as you can.
2.Mince the lamb and onion. Transfer to a bowl and season with black pepper. Cut rounds from the pastry using a saucer as a template. Add the filling then bring the sides of the pastry up over the top.
3.Bring a pan of lightly-salted water to a boil, add the dumplings and boil for about 15 minutes, or until cooked through.
