- 225g self raising flour
- 50g cold butter
- 120ml milk
- 25g caster sugar
- 1 tsp baking powder
- 1 whole zest of lemon
- 1 tsp lemon juice
- 3 tsp poppy seeds

1. Heat the oven to 200C.
2. Sieve the flour and baking powder and add a pinch of salt.
3. Rub the butter into the flour until the mixture is like breadcrumbs. Then add the sugar, poppy seeds and lemon zest.
4. Stir the lemon juice into the milk and make a hole in the middle of the dry ingredients and then pour in the juice and mix together gently into a ball.
5. Roll the dough out to aboiut 2cm thick and cut out using the top of a glass.
6. Place on a baking tray and brush with some milk or egg and then bake for 10-12 mins - they will rise and turn a nice golden colour.
7. Leave to cool for a little then serve with whipped cream and enjoy!
