- 14oz Prepared sandwich cake mix
- 3 oz Dessicated Coconut
- 4 oz glace cherries
- 4 oz Icing Sugar Sieved
- 1 tbspn lemon juice

1. Set the oven to 350f/180c, Gas mark 4. Also, grease a 7 inch shallow square sandwich tin.
2. Mix in coconut with cake mix, then spoon into tin and bake for 35 mins.
FOR THE TOPPING
Cut glace cherriesinto quaters and arange evenly over the cake. Mix icing sugar with lemon juice to make a fairly thick glace icing. Drizzle the icing over the cake and leave icing to set
Cut into 10 fingers.
