- 1 onion, finely chopped
- 1 medium potato
- 2 courgettes
- 1 clove garlic, finely chopped
- 1 teaspoon dried mixed herbs
- 80g brie
- 2 vegetable stock cubes
- 2 pints boiling water

A classic of my mum's with my own take on quantities. Easy to make and always surprises people who expect to dislike it!

1. Melt butter in pan, and add garlic and onion.
2. Once onions have begun to soften and the garlic has browned, slice the courgettes and potato and add to the pan.
3. Dissolve vegetable stock into boiling water, and add to the pan. Also add salt, pepper and dried mixed herbs. Cover and leave for approximately 20 minutes on a low heat.
4. Gradually melt in the brie.
5.Blend until desired texture, Serve well seasoned. This dish is well complimented by salt and black pepper croutons.
