Ingredients
- 225g (8oz) thin green beans, cut into 5cm (2in) lengths
- 500g (1lb 2oz) cooked mixed beans of your choice (haricot, butter, pinto, cannelini, red kidney beans or chickpeas) (or use 2 x 400g cans mixed beans)
- 2 tbsp olive oil
- 2 tbsp cider vinegar
- 125g (4oz) baby spinich leaves

1. Boil or steam the thin green beans until just tender - about 4 minutes.
2. Refresh in cold water and drain.
3. Mix together the green beans, cooked mixed beans, olive oil and vinegar in a bowl.
4. Place the spinich leaves in the bottom of the serving bowl and pile the bean mixture on top.
