- 7oz plain flour
- 4oz Butter
- 20z icing sugar
- 1 lemon rind
- 1 egg yolk
- 3 tbsp milk
- 3 tbsp cornflour
- 10floz cold water
- 2 Juice and rind of lemons
- 6oz caster sugar
- 2 eggs

1. To make the pastry, sift the flour into a bowl and rub in the butter. Mix in remaining ingredients and knead it together. Leave the party to rest for 30 mins.
2. Preheat the oven to 180C and grease an ovenproof dish.
3. Roll out the pastry - about1/2 cm thick and line the lish and then prick the pastry.
4. Bake for 15 minutes and then when you take it out reduce the oven temperature to 150C
5. To make the filling - mix the cornflour with a little water. Put the rest of the water in a pan and add the lemon rind and juice and conflour paste. Cook and stir for 2 mins - stir in 5 tablespoons of sugar and the egg yolks and pour into pastry shell.
6. In a separate bowl, whisk the egg whites until stiff.
7. Gradually whisk in the remaining sugar and spread over the pie. Bake for 40 minutes.
