Ingredients
- 2tbsp olive oil
- 1 large onion, finely chopped
- 225g chorizo, thickly sliced
- 4 cloves of garlic, finely chopped
- 300g boneless, skinless free range chicken thighs, chopped
- 2 peppers, sliced
- 300g paella rice
- pinch saffron mixed with 3tbsp hot stock
- 700ml hot chicken or fish stock
- 175g tomatoes, roughly chopped
- 200g raw king prawns, shells removed

1. Heat the oil in a large pan, add the onion and cook over a medium heat for 5mins. Add the chorizo and garlic and cook for a further 2 mins, then add the chicken, increase the heat and cook for a few mins until the chicken is golden. Add the peppers and rice and stir until coated.
2. Pour in the saffron and its stock, together with the hot stock. Bring to a simmer, reduce the heat and cook very gently until all the liquid has been absorbed - about 18mins. Stir in the tomatoes and prawns and cook for a further 3mins, until the prawns are cooked through.
