Amazing Banana Bread/cake, great sliced with a layer of butter!!!

Method

  1. 1

    1. Rub butter and flour together until breadcrumbs.
    2. Add sugar and raisins. Give a stir.
    3. Beat eggs. Spoon out honey and stir in.
    4. Mash Bananas and add to mixture.
    5. Give it a good stir.
    6. Grease loaf tin.
    7. Pour in ingredients & cook at 180oc/350f for 1 hour.
    8. Check to see if cooked (put skewer in and if it comes out clean it's ready!)
    9. Turn out bread and leave to cool.
    10. Eat and enjoy!!!

this bread is yummy we just started eating it warm out of the oven- yum! i also made a gluten free version with gluten free flour for my mother in law who is a coeliac and it turned out good too.

nice and moist only problem my son and husband have eaten it all
I used a 25 cm loaf tin which was just right
i would use this recipe again
its a great way to use up bananas that are very ripe, I would say from experience its not worth doing with green bananas or very firm ones

I made this dish because I had bought some brown sugar I needed using up and a few bananas going over-ripe. This recipe is really easy to make and tastes great - was a big hit with my family.
