i made this tortilla for my friends for a light lunch, was nice with a salad and a glass of soliera airen-chardonnay

Method

    1. Heat oven mark 3/170oc/fan 150oc

    2. Parboil potatoes, cool then slice fairly thinly

    3. Heat the oil and cook the onions over a low heat for 8 to 10minutes

    4. Add the sugar and cook for another 15 mins,until the onions are golden and soft.

    5. Stir in the rosemary and cook for another few minutes.

    6. Grease a 20cm cake tin, begin with the potatoes, layer with the onions and crumbled cheese.

    7. Finally finish with the potatoe, beat the eggs, season and pour over layers.

    8. Cook in oven for 40minutes to an hour.
