Method

    1. Have ready a large saucepan of boiling water and a steamer,if available.Thoroughly grease a 2 pint pudding basin.
    2. Cream together the margarine and sugar until light and fluffy.Gradually beat in the eggs,beating thoroughly after each addition.
    3. Sieve together the flour and ginfer and fold carefully into the creamed mixture.Grate the rind from the oranges and add,mix well.
    4. Cut all remaining white pith from the oranges and cut across into slices.Use them to line the base and sides of the pudding basin.
    5. Fill the basin with the creamed mixture and level the top.Cover with a double layer of greaseproof paper and foil,and steam or boil for 2 hrs,ensuring that the pan does not boil dry.
    Turn out and serve with cream or custard.
