Method

    1. Set the oven to moderate,Gas Mark 4/350F/180C.
    2. Using the fork,break up the egg white then add the sugar and mix until frothy.
    3. Add the flour,vanilla essence,almonds and melted butter and mix together until frothy.
    4. Oil a baking sheet.Put 4 teaspoons of the mixture on it fairly well apart as they will spread during cooking.
    5. Smooth into 2 inch rounds with a spoon and bake for 10 minutes until pale golden colour.
    6. Brush a rolling pin with oil.
    Then when they are cooked,remove them with palette knife and lay them over the rolling pin so that the biscuits harden in a curl.
    Cook then shape the rest of the mixture in the same way.
    Serve with coffee,mousses,trifles or ice cream.Makes about 16 tuilles.
