Ingredients
- 2tbs vegetable oil
- 1 onion
- 1 red pepper - seeded and diced
- 1 garlic clove - crushed
- 200g/7oz long grain rice
- 175g/6oz smoked ham (optiona) - roughly chopped
- 900ml/1 ยฝ pints chicken or vegetable stock
- ยฝ tsp paprika
- ยฝ tsp turmeric
- 175g/6oz prawns
- 100g/4oz frozen peas
- salt and pepper

Produced in the South Eastern Australia appellation, two-thirds of the wine is sourced in the Riverina region of New South Wales, a quarter from Clare Valley, a small portion from the Eden Valley, and the remainder from Barossa, Coonawarra and the Yarra Valley in Victoria. Heat the oil in a pan. Cook the onions for approx 3-4 mins until golden.
Add the pepper, garlic and rice - stir fry for 1 minute.
Add the ham, stock, paprika, turmeric and bring to the boil. Then simmer for about 12 mins on a low heat.
Stir in the prawns and peas and cook for a further 3-4 mins until rice and veggies are tender.
season to taste.
We had this for a dinner party- it was fab!
