Ingredients
- 1 Β½ cups Plain flour
- 600 mls Buttermilk
- Β½ cup Dessicated coconut
- 1 tsp Finely. grated lemon rind
- 1 tsp Baking powder
- 2 cups Bluberries (fresh or partially thawed frozen berries)
- 1 tbsp White sugar
- 4 Eggs. seperated
- 250g Whipped cream
- Tropical fruit slices (e.g: bananas. mango etc)
- Maple syrup or passionfruit pulp

Description
These are delicious, healthy pancakes that are easy to make.

1. Stir the flour, coconut, baking powder and sugar together in a large bowl. Make a well in the centre.
2. In a seperate bowl, beat together the egg yolks, buttermilk and lemon rind. Gently fold the buttermilk mixture into the flour mixture.
3. In a clean bowl, beat egg whites until stiff, use a slotted spoon to carefully fold through the batter.
4. Heat a knob of butter in a large frying pan and place several large spoonfuls of mixture into the pan. Sprinkle a spoonful of blueberries onto each pancake. Cook for about two minutes or until bubbles form on the surface of the pancakes, then turn and cook on the other side for about 1 minute. Keep warm in the overn, until the remaining mixture is cooked.
Chef's Tips
* Try putting other ingredients in the pancake batter like chocolate chips, strawberries or other fruit.
