This dish is basically all prep and then leave in the oven to cook!
Firstly, turn the oven to 180 degrees!
Okay, now wash and half the potatoes ( leave the skin on) then put in a pan and par boil.
While the potatoes cook you can get started on he paste.
Its easier to use the food processor for this recipe. Firstly chuck the onions in to the processor, finely chop but avoid turning in to pulp. Empty into the bowl, now do the same with the coriander, garlic and chillies. Empty in to the bowl with the onions. Now put in the oil, turmeric powder, salt and lemon juice. Stir all together. Have a good taste and see what you think!
Once you are happy with the flavours, put the bowl to one side. Now check on the potatoes, once they are ΒΎ cooked, take them off the heat. Get yourself a large oven tray and place foil over the bottom of it.
Now you are ready !
Dip the potatoes in the paste mix and cover generously, put them straight on t the baking tray, now do the same with the fish. There should be a lot of paste left over, create a topping about a cm thick over the fish fillets. Once all the paste is used up, put the tray in the oven and set them to cook for about 20 mins, being careful not to overcook the fish. Once cooked, the tops of the fish and potatoes should be nicely browned, donβt worry if they are slightly overcooked, it just adds to the flavour. Serve with a tomato, onion & coriander salsa drenched with fresh lemon juice and seasoned well.
This is best eaten with naan or pitta bread, Enjoy!
Chef's Tips
