Ingredients
- 1 Medium Onion Finely Chopped
- 1 Red Pepper De-seeded and Finely Chopped
- 400g Tinned tomatoes
- 1 tbsp Red Wine Vinegar
- 2 tbsp Coriander Leaves. Finely Chopped
- 4 White Fish Fillets such As Pollack. Cod or Coleyt
- 1 tbsp Olive Oil
- 150g Wild Rice or Basmati Rice. Cooked as per pack instructions
- Dwarf or French Beans

1. Heat the olive oil in a large, deep frying pan a wok will do. Add onion and fry over a medium heat for 5-10 min until softened. Add the pepper and fry for a further 2-3 min.
2. Sir in the tomatoes and vinegar, bring to the boil and 1-2 min, then add the fish and poach gently for 10 min. Add a little water if sauce is to thick
3. Stir through the coriander and season with salt and pepper to taste.
4. Server on a bed of basmati and wild rice with fresh dwarf/french beans.
Chef's Tips
Try to use pollack as this is more sustainable than cod or haddock.
You are limited to serve with rice try your favorite pasta instead
