Ingredients
- 450g Basmati rice. washed
- 1 Medium onion
- 1 Large knob of butter
- 4 Cardamom pods
- 1 cinnamon stick
- 8 cloves
- 2 Bay Leaves
- 600ml chicken or vegetable stock
- salt
- 2/3 Saffron strands

Description
Very Fluffy, tasty Pilau Rice.
Method

1) Soak the rice for 30 minutes (Very Important to get fluffy rice)
2) Chop the onion finely and cook onion in butter for 5 minutes so soft.
3) Add spices to onion and cook for a further 2 minutes.
4) Add the soaked and drained rice and stir in.
5) Add the stock and a pinch of salt.
6) Bring to the boil, Then when at the boil cover and reduce the heat to the lowest setting. Cook for 10 minutes stirring every so often to stop browning on the bottom.
7) Turn off the heat, stir again and leave with the lid on for a further 5 minutes to steam.
8) Remove the cinnamon stick and bay leaves if you can see them. I personally dig them out, and also remove the cloves and cardamom pods as they have done their job in the cooking)
Serve.
