- 350g Baby new potatoes

- 5tbsp Olive oil
- 1 Sprig of rosemary
- 2 Boneless chicken breast with skin
- 15g Butter
- 1 Bag of Rocket leaves

Preheat oven to 200'c, Gas6.
Slice 1/2 of the lemon. Grate zest and squeeze juice from remaining half and set aside.
Cut the potatoes in half lengthways and put in a medium roasting tin with the sliced lemons and garlic in skins but crushed under a knife. Drizzle with oil and sprinkle with chopped rosemary, salt and pepper. Toss and bake in the oven for 20mins.
Melt the butter and the reserved lemon zest and juice in a small pan. Make 3 diagonal slashes in the chicken breast.
Remove roasting tin for the oven and turn the potatoes, garlic and lemon, add the chicken breasts, nestling them in amongst the potatoes. Brush liberally with the lemon butter and season .
Bake in the oven for 35min, until the chicken is cooked and the potatoes are tender. Serve with fresh rocket and the pan juices poured over.
