- 2 tbsp oil
- 400g stewing beef, diced
- 1 onion, chopped
- 2 cloves garlic, chopped
- ยฝ tsp Cajun spices
- 2 tbsp chilli powder
- 1 tbsp ground cumin
- ยฝ tsp dark brown sugar
- 1 tsp cayenne pepper
- 2 x 400g cans chopped tomatoes
- 400g can kidney beans, drained
- 1 packet cream crackers
- Handful grated cheese
- To taste Chopped coriander

1. Heat the oil in a large pot and brown the beef. Add the onion, garlic, Cajun spices, chilli powder, cumin, brown sugar and cayenne pepper. Stir well then add the tomatoes and 400ml water.
2. Simmer for 2 hours, stirring occasionally. Add the kidney beans and simmer for a further 30 minutes.
3. For the fixins, crush up the crackers and mix with the cheese and coriander. Spoon the chilli into serving bowls and top with the fixins before serving.
