Ingredients
- 1 Pack of baby spinach
- 2 Cloves of garlic finely chopped
- 2 or 3 Shallots. thinly sliced
- 6 or 7 Anchovy Fillets in Oil. drained and patted dry
- 5 Dried Chillies chopped finely seeds and all
- 1 Small pack of pine nuts
- 15 - 20 Capers
- 1 Big bunch of parsley finely chopped
- 1 Good glug of extra virgin olive oil
- Salt and freshly ground black pepper
- Enough spaghetti to feed 2 people

Throw your spinach in a pan with a small amount of water - let it wilt, drain and pat dry then set aside. In a non stick frying pan add a good quantity of olive oil - don't over heat this as you want the rest of the ingredients to infuse their flavour. Add the garlic, shallots, chillies and anchovy fillets and with a wooden spoon break down the anchovies until they melt in the oil - cook for 3 or 4 minutes still on a low heat. Throw in your pine nuts and capers and your cooked spinach. Stir around for another 2 minutes. Drain your cooked spaghetti reserving two or three table spoons of the water the pasta cooked in. Add the cooked drained spaghetti and reserved water into the frying pan and mix all the ingredients together, add the chopped parsley. Stir around for a further minute and throw over loads of parmesan. Serve.
