Description

From River Cottage Everyday. A great way of getting breakfast on the go!

Method

  1. 1

1.Heat the oven to 160C/Gas 3. Using a baking tin about 20cm square, grease and line your tine well.

    2. Place the peanut butter, honey, grated citrus zests, butter and sugar, into a deep saucepan and allow to warm up gently over a very low heat. Wait until all the ingredients are dissolved making sure that you stir the mixture from time to time.

    3. Mix in the oats, seeds and dried fruit thoroughly and until combined completely so that all ingredients are evenly combined in the mixture.

    4. Now spread the mixture evenly in your baking tin. Make sure that you smooth down the top of the mixture in the baking tin as you go.

    5. Now simply put into the preheated oven for approximately 30 minutes or until the mixture has turned golden in the centre and golden brown at the edges.

    6. Now leave to cool completely in the tin then turn out and cut into squares.

Chef's Tips

These bars will keep for 5-7 days in an airtight container, but also freeze really well.

Don't be tempted to cut your Honey and Peanut Butter Booster Bars until they are completely cooled, after they come out the oven, as they are much easier to cut when they are cold.
