Ingredients
- 40ml olive oil
- 5 garlic cloves.thinly sliced
- Β½ Medium Onion finely chopped
- 225g Chorizo sausage.remove skin and thinly slice
- 175ml Red wine
- 1 x 400g Can of chopped tomatoes
- 1 tbsp. thyme leaves
- 2 x 400g cans butter beans. drained
- 2 tbsp. chopped flat leaf parsley (garnishing)
- Crusty Bread. to serve

This dish is really simple and so tasty. If you like chorizo you must try it.

Put the oil and garlic into a pan and cook over a medium heat until the garlic begins to sizzle. Add Chorizo and cook until light brown on each side then add the onions and cook for a further 4-5 minutes until the onion softens. Add the red wine to the pan and cook for 5 minutes until it has reduced to almost nothing, add tomatoes, thyme, beans and a pinch of salt, then simmer for 15 minutes. Sprinkle with the parsley then spoon into 4 warmed bowls. Serve with crusty bread.
