Ingredients
- 110g pancetta
- 1 onion
- 410g tin of mixed beans
- 400g Tin of Chopped Tomatoes
- 1 clove garlic
- 600ml vegetable stock
- 1 teaspoon dried mixed herbs
- pinch chilli powder
- 1 tablespoon fresh basil

Fry the pancetta in a frying pan until golden brown and then drain on kitchen paper
Meanwhile, heat the oil in saucepan, add the onion and cover and cook gently for 10 mins, until soft, without browning
Add the remaining ingredients (except the pancetta) to the pan, bring to the boil, then cover and simmer for 10 mins
Add the pancetta, then cover and simmer for a further 10 mins
Season to taste, then serve.
