Ingredients
- 0.5kg lamb mince
- 1 onion chopped
- 1 Clove of Garlic Crushed
- 300ml Lamb Stock or chicken stock
- 2tbspn tomato puree
- 4 tbspn freshly chopped mixed herbs
- 1 tbspn cornflour blended with a little cold water
- salt and freshly ground black pepper
- 750g boiled potatoes
- 25g Butter
- 3 tbspns milk
- 125g red leicester. grated

The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. It has definite claret qualities; the nose is layered with ripe cherry, toasty oak and a touch of cigar box. 1. Preheat the oven to 200dgs C. 400dgs F Gas Mark 6.
2. Place the lamb, onion and garlic in a saucepan and fry for 8-10 minutes, stirring occasionally.
3.Add the stock, tomato puree, most of the herbs, blended cornflour and seasoning to taste. Bring to the boil and simmer gently for a further 5 minutes, stirring until thickened. Transfer to an ovenproof dish.
4. Mash the potatoes with the butter, milk, most of the cheese and seasoning to taste. Spoon or pipe onto the meat and sprinkle over the remaining cheese.
5. Bake in the preheated oven for 25 mins or until golden. Sprinkle over the remaining herbs and serve.
