Description

Well.. I have named it Aaloo Bahara :)
Basically they are pitted potatoes of just the right size , stuffed with spiced cottage cheese/paneer served in
sweet cream gravy.

Method

    Lets see we have these ingredients before we start :


    1. Medium sized potatoes... you may slice a large one in half if they are too big :)
    2. Finely Chopped onions - 2 tea cups
    3. chopped tomatoes - 2 tea cups
    4. Fresh grated/crushed ginger-garlic - 1 teaspoon
    5. 2 chopped green chillies
    6.Grated cottage cheese/paneer - 2 tea cups (150 gms should be good for 4 potatoes)
    7.Cream -half tea cup... even clotted cream from milk / Malai would do excellent.
    8.Grated Cashews - 5... these are optional


    Now..


    Treatment with potatoes :
    - Peel the raw potatoes and create cavities using a curled/peeling knife. Make sure the rims are not too thick.
    - Microwave these for 5 mins .. else you may bake these for 10 mins at 200 C
    - pour some oil in a pan and shallow fry these gently to golden perfection. Those who cant microwave/bake, please deep fry these until they turn golden
    -Check if they are cooked by inserting a toothpick or whatever suitable. If not, go on with frying till u find them good.


    Cheese filling :
    - heat some oil in pan and add all chopped clillies, crushed ginger garlic, 1 cup onions. keep stirring for 3-4
    minutes on low flame.
    - add 1 tea spoon coriander powder, half tea spoon turmeric ,couple of pinches black pepper,salt to taste. stir for a minute
    - add 1 cup tomatoes and stir at intervals for 2 minutes
    - add crushed cottage cheese and cook for 4-5 mins.
    - pour the preparation on a plate and let it cool.


    lets do the gravy in the meanwhile


    Gravy :
    - heat little oil in pan again and add remaining chopped onions. stir at intervals for 4-5 mins.
    - add a tea spoon of coriander powder, half a teaspoon salt and stir for a minute.
    - add remaining chopped tomatoes and cook for 5 mins. stir occasionally.
    - add a teaspoon of sugar, cream and cashew paste and pour 2 tea cups of water(200 ml)
    - stir occasionally and cook for 5 mins.




    The cheese filling must have cooled down a bit now. Stuff it in the potatoes using a spoon.
    Once the job is done, slowly release the potatoes in the gravy with the open side upwards.
    Cook covered for a couple of minutes and you are done.


    Presentation :
    Serve like u see in the pic :) garnish with a circle of curd or cream around potatoes in gravy.
