Description
A quick version using ready made custard and pie crust. If you have more time you can make your own custard and pie crust.

1/ Preheat the oven to gas 4/ 180
2/ Place the pie crust in a pie dish. Pour the custard into the pie crust. Bake the custard pie for approx 45 mins until set and browned.
3/ While the pie is baking, put the rhubarb, sugar, ginger a little of the stem ginger syrup and a little water in a pan and simmer for 10 mins. Remove from heat and leave to cool.
4/ When the pie and the rhubarb are completely cooled, strain the rhubard through a sieve to remove excess liquid. Spoon the rhubarb over the pie top. Drizzle a little of the excess syrup over the top to glaze.
Serve with cream or ice cream.
