- 5tbs double cream
- 2tbs chopped parsley
- 1-2 bay leaf
- 2 Carrots cut in chunks
- 1 med potato
- 1-2 stock-chicken or vegetable
- salt and pepper
- 2 garlic cloves

*This is a good way to use left overs from your roast chicken.
If you have any meat left on the carcass take off and finely chop ready to add at the end if you would like a little bit of bite in your soup
Bring water to the boil and add stock cube(s) of your choice, chicken carcass, bay leaf, 2 cloves garlic ,onion, potato and carrot and simmer for approx 35-40 mins.
Remove carcass and bayleaf carefully, then blend remaining veg whilst still in pan.
Add cream, salt and pepper to taste and stir in chopped parsley leaving a small amount to sprinkle on top when serving.
Serve with crusty garlic bread for Dunking !

Don't worry if your veg is not A grade , this is a great way to use the onion and carrot that have been lurking at the bottom of the fridge for the past week !!!!!
