Peel and dry spinach. Heat oil to 180 C in a pan or fryer
After being floured, deep fry the spinach in small amounts until they are crispy. At the beginning of cooking the leaves become flabby, turning crispy when the water evaporates.
Once the desired consistency, remove the spinach from the pan and place on paper towels.
Divide among 4 plates and season with salt, pepper, lemon and orange zest.
