Description
Super quick, super easy and super tasty. Pretty healthy too when it comes to ice cream! Keep a banana in the freezer for when you need a fix! Great for children.

Peel and slice the banana (approx. 2cm chunks). Place on a tray lined with baking parchment, cover with cling film and freeze until solid. You can then tip the slices into a freezer bag and freeze until needed.
When you are ready to make the ice cream, put the frozen slices and the cream / creme fraiche, if using, in a mini chopper (stand alone or the type that comes with a stick blender). Blitz, removing the lid and poking about with a spoon now and then, until it resembles ice cream. It will just seem like shards of frozen banana at first, but will come together. It will probably take between 3 and 5 minutes to take on the consistency of ice cream - a little long without the cream / creme fraiche.
Serve straight away.
Chef's Tips
This makes 2 scoops - perfect for one person. Just multiply the quantities and use a standard food processor if you want to make more. If making larger quantities, you can also add one or two ripe, unfrozen bananas (with or without 1 tbsp cream / creme fraiche per frozen banana, as you prefer) to speed up the process, although the texture will be softer and you may need to place it in the freezer for a little while before serving.
The optional cream / creme fraiche just makes it that little more creamy, and speeds up the process a little.
Also great with mango added (1/2 mango per banana, or to your taste). Chill the mango in the fridge (for softer ice cream), or freeze chunks or mango, then add when blitzing the frozen banana.
Add a tablespoon or raw cacao powder for a chocolate version.
Can be refrozen in a lidded plastic box if needed.
The frozen banana slices taste pretty good on their own too - a handy snack in the summer! Or blitz a frozen banana with 200-250ml milk for an ice cold banana milkshake.

If you blitz it for longer, you can also just use frozen bananas on their own - again, I tried this today. Just a little less creamy than with the cream / creme fraiche, but still very good. I have updated the recipe accordingly.
For a dairy free version, for more than one person, blitz a ripe banana in the food processor, then add one or two sliced frozen bananas and blitz until it is smooth and resembles soft ice cream, then pour into a container and freeze until it has firmed up. I tried this today and it is great.
