- 2 pork fillets
- 2 Cloves of garlic or 2 tsp of garlic paste
- 3 slices bacon lardons
- Β½ pint Cream
- peppercorns
- 1 onion chopped
- 10 button mushrooms

1.Rub the garlic into the Pork fillets and leave for an hour
2. Seal the Pork in a frying pan until it is just turning golden
3. Put into the oven - gas mark 4 for 20 minutes
4. Meanwhile use the pan in which you sealed the pork and fry the onions and sliced mushrooms. Add the bacon lardons and peppercorns and leave to sweat down over a low heat.
5. Once the pork is ready (it should be firm to the touch) take out of the oven and slice into medallions and place onto the plate
6. Add the cream to the onions, mushrooms and bacon and peppercorns and stir until a nice thick consistancy.
7. Pour over the medallions and serve with new potatoes and green vegetables
