Ingredients
- 2 tbsps olive oil
- 1lb stewing or braising steak
- 1 ยฝ onions. peeled and sliced
- ยฝ red pepper. seeded and diced
- 1 large tomato. sliced
- 1 large carrot. diced
- 4 small mushrooms
- 1 slice streaky bacon
- 1 oz butter
- ยฝ pint water
- 4 tbsps red wine
- 1 tsp tomato puree
- 2 tsps salt
- 1 tsp oregano
- 1 tsp thyme
- Freshly ground black pepper

Trapiche is situated in the Mendoza region of Argentina. The winery was established in 1883 and they are well known for producing quality wine at affordable prices. This is a great example of Sauvignon Blanc from the Mendoza region. Fresh aromas of grapefruit, crisp blackcurrant leaf, green pepper and grassy back notes. Oven: 180o C. Heat oil in a frying pan. Trim meat, cut into 1 in. cubes and brown in oil. Transfer to a casserole dish. Fry all diced and sliced vegetables gently in butter, adding de-rinded, diced bacon. When vegetables are soft, add contents of frying pan to casserole. Make up stock by placing all ingredients for this in a saucepan and bringing to boil. Add to casserole. Place in oven for a 1.2 to 2 hours. Taste and adjust seasoning. Thicken with a little mixed butter and flour if necessary before serving.
Chef's Tips
The quantities are merely for guidance and I mix these up all the time, generally adding more vegetables. I often cook this in my slow cooker overnight and serve with home-made wholemeal bread and butter, buttered rice or mashed potato.
