- 4 to 5 tbsp desiccated coconut
- 3 tbsp Rum (optional)

My ex-boyfriends mum made this for me, and it has since become a big favourite. My kids now love it - the rum is for an adult version. People who don't like bananas often like this

Preheat the oven to 180c. Peel the bananas and cut in half. Then cut each half in half again lengthwise, so you have enough to pack, long cut side up, into a shallow baking dish. Pour over the fresh orange juice so it almost covers the banana slices. Sprinkle over the brown sugar and the rum, if you are using it. Scatter over the coconut and cut up the butter and dot it about on top. Bake for about 30 mins in the middle shelf, checking halfway through the liquid - if it looks dry add a bit more orange juice. Serve hot - its delicious with cream!
