- 5 Carrots

- 8-10 Big Tatties
- 1 Large onion. finely chopped

Slightly fry the onion in a dollop of butter until soft. Mix in the chopped carrots, neep and tatties. Add the stock and top up with boiling water until just over the vegetables. Season with salt and pepper.
Boil gently until all vegetables are soft. Mash up with a tattie masher until almost smooth.
Serve straight away or keep in fridge and use a day later.....second day tattie soup is great!
