Typical recipe from Colombia.
Bring to boil water, milk, spring onion, celery, coriander and salt. Once is boiling, add eggs one by one gently without breaking the yellow. Chop the cheddar and distribute in four bowls. Once the eggs are cooked, pour soup and eggs in the bowl over the cheese.
