- 2lbs / 900g tomatoes
- 3oz / 75g Butter
- 1oz / 25g Grated cheese
- dash of thyme and parsley

1. Boil lentils according to packet directions (which can be from half to 2 hours) until they are soft but not mushy.
2. Add onions, peeled and chopped tomatoes and herbs
3. Boil for a further 10 minutes. Do not strain.
4. Add butter and cheese to melt before serving hot straightaway.
Note: Its not a soup that keeps. If I'm in a hurry I use tinned tomatoes ready chopped and peeled and add the grated peel and juice of half an orange.
