2 tsp. baking soda
1 cup cranberries or raisins

Mix first 6 ingredients in mixer. Combine next 4 ingredients and add to mix, blending well. Fold in the raisins or cranberries and nuts. Grease 2 loaf pans and pour in batter. Bake for 50-60 minutes at 350 degrees. This bread is dense, and moist, and better the next day. cut baking time down 25% if using a convection oven, quick bake.
