- 400g Tagliatelle pasta
- 4 Garlic cloves. peeled and left whole
- 20g Butter
- 1 tbsp. Olive oil
- 200g Spinach. washed
- 200-250g Leftover gammon. chopped
- 0.5 tsp. Black pepper
- 0.5 cup Hard cheese

The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. Lovely pasta with spinach, garlic and leftover christmas gammon.

1. Cook the pasta in boiling water.
2. Cook the garlic in a pan of boiling water for couple of minutes or until tender. Drain and toss into a large non-stick frying pan with the butter and olive oil and cook over a low heat until golden.
3. Add the spinach , add the crème fraiche and the chopped gammon. Bring up to the boil, season with pepper and toss into the cooked pasta. Serve with grated cheese.
