- ½ pack feta cheese cubed
- 1 avocado peeled and cubed
- 2 tea spoons Balsamic Vinegar
- 1 tomatoes chopped
- 1 squeeze Lemon Juice (fresh)
- 2 teaspoons pine nuts. toasted

Add all ingredients to the salad and finally the dressing of lemon, balsamic, olive oil and salt and pepper to season.
Lightly toss together.
Enjoy! Have soda bread on the side or could serve with chicken or quiche. I just love it on its own.
