This is lovely sandwiched together with whipped cream and strawberries

Method

    1. Preheat the oven to 160C (325F or gas mark 3)
    2. Grease 2 small sized cake tins
    3. Mix the eggs and sugar together until light and fluffy
    4. Add in flour, salt and baking powder and then add the vanilla essence.
    5. Put the butter and milk into a saucepan and boil until it bubbles up to the top
    6. Pour the bubbling milk mixture into the eggs, sugar and flour mixture, beating gently
    7. Pour into the prepared cake tins and cook in the preheated oven for 20-25 mins.
    8. Leave to cool on a wire rack and then serve with whipped cream and strawberries or other summer berries
